Bex Walker is the founder of #bexfast and queen of the breakfast pots. Unsure of what a breakfast pot is? You may have noticed there's a new trend of super food laced, delicious, colourful breakfasts that combine the likes of fruit, oats and many other goodies and come pre mixed in a pot/bowl? Well that's them. No longer is a sugar laced cereal the way to start the day, it's all about kick starting it with a supercharged bowl of something delicious and nutritious that'll see you through to lunch.
Bex is the first to admit she wasn't always healthy, previously a smoker and lover of the occasional deep fried treat, but motherhood changed all that. Rebecca wanted to be a super fit mama who could help show her daughter how to be confident, have a strong sense of who she was and the power healthy food can have on your body so she set about getting fit (the woman can run!) and became veggie and then ultimately vegan. Her new healthy approach to life combined with her love of cake is where the #Bexfast journey began. Started as a side hustle alongside a full-time job, Bex worked weekends and evenings to get it off the ground as well as juggling family life. It paid off, Bex's delicious, handmade, junk free super pots are now stocked in three shops and she runs a delivery service for her regular clients who order from her weekly . It's now safe to say this is now her full-time gig.
What's your go-to midweek meal and why?
I don't really have one specific go-to meal but it needs to be quick, easy and nutritious. I guess we probably have a lot of grains like quinoa or rice with black beans or chickpeas and loads of veg.

When your daughter Tyler is being difficult about food what's your key to staying sane?
I'm quite lucky with Tyler as she isn't that fussy but when she does have her moments it's either eat what's there or be hungry.. She doesn't like being hungry so once she's figured out I'm serious she usually just gets on with it!
You always look incredibly stylish! What's your go-to piece of clothing that you find helps transports your frame of mind from mum mode to boss mode?
Ahh thanks! I feel like I wear the same thing most of the time and because my wardrobe is all black it probably looks like I do too! I'm always in trainers no matter what I'm doing but my (faux) leather jacket is probably something I'd throw on to make me feel a bit more like I'm in boss mode or if I'm going to meetings. Will probably still be wearing a hoody though haha!
I've spotted you're partial to a pair of trainers! What are your current favourites?
I have a really cool pair of retro Jordan's my friend gave me for helping out on a shoot she was doing, they only come out on special occasions! I love vans, they are super comfortable and they look good with pretty much anything. I love my Nike Free 5s for running and I'm really loving the new range Asics are bringing out too.
As both an entrepreneur of a busy startup and a mum, what keeps you motivated and sane whilst juggling it all?
I don't know if I am sane anymore! Haha! I think making the decision to not work on Sunday's has probably done some good and making sure I can do the school runs as much as possible. I think I need that bit of normality even though it usually means I'm in a major rush to get back on time!
There are a lot of healthy food trends about at the moment, many focused on eating clean and similar. To someone not living that lifestyle, it can all feel a bit intimidating, confusing and unobtainable. What are your top 3 tips for making our brekkies healthier than your average bowl of weetabix or porridge and won't break the bank?
That was definitely me before I started looking into it all, I had no idea what foods could do for/to your body. My first and probably most important tip would be to make sure that what you are putting in your body is a real food. Pretty much everything packaged in the supermarkets has a long list of ingredients you won't recognise or even be able to pronounce! If you don't know what it is, don't eat it. I like my food to have 1 ingredient in the label like 'oats' or 'brocolli'. Tip 2 is superfoods! Tesco now sells pouches of chia seeds and all different types of nuts and seeds at really affordable prices. Adding some super foods to your diet is always a win and doesn't take any prep, just chuck them on! And tip 3 would be to make overnight oats. Oats, chia seeds, milk, fruit and seeds in a jar - wake up, dig in a spoon, instant healthy delicious breakfast in no time!. Zero faff!
Bex's Mid-week meal super food bowl and playlist:
So this was super simple and made from a bit of whatever we had left in the fridge and cupboards! It had been a super busy week.
400g of tinned chickpeas
salt and pepper
Ground coriander, dried rosemary and garlic powder
1. Pre-heat the oven to 200C (fan)
2. Heat about 1 tablespoon of avocado oil in the oven then coat the chickpeas in it. Add garlic powder, salt, pepper and dried coriander and rosemary, mixed well and pop in the oven for about half an hour
2. Massage some bright and colourful buttonhole kale with olive oil, a squeeze of lemon and a little pinch of sea salt and put to the side
3. Chop some potatoes into slices then boil until soft (I chucked the sprouts into boil at the same time).
4. Slice some avocado, cucumber and carrots and set aside.
Once the potatoes, chickpeas and sprouts are ready arrange in a bowl and eat!
