Here's our second video for Sainsbury's and it is honestly one of our absolute favourites. I'll often cook this on a Friday when I am craving something easy and comforting. It's a mix of the Spanish dish Espinacas con Garbanzos and the Italian dish pasta e Ceci and it works so well with pasta. Archie is a big fan of chickpeas (which surprised me as I hated them as a kid) and wolfs this down, it's also a great way to get some protein into my husband who's veggie.
Gently mashing the chickpeas whilst leaving some whole gives the sauce a thick and almost creamy like texture - so good. It's also a job that Archie can help out with which is great as I'm trying to encourage more interest in cooking and what we eat. I've tried this with various pasta shapes and shells are our current fave as the chickpeas can nestle inside them and the result is a fabulous mix of tastes and textures in one mouthful.
Archie's cameo at the end is priceless and, of course, I'd be bitching about not having enough cheese!
