These chicken kebabs go down a storm at ours, Archie is constantly asking for them. They have a really mellow flavour that goes nicely with a zesty couscous and, with a little planning, are an easy midweek meal. I love them because firstly Archie loves them and I can smuggle loads of veggies into the couscous and secondly they're delicious. See how motherhood has totally changed my priorities there!Read More
Little Cooks Co was founded by two mums, Helen and Kate. Helen is a mum of one who left her job in central government to train in nutrition and Kate is a mum of two with a high-flying job in marketing. As often is the case, I know it was in mine, having kids has made them passionate about getting kids eating good stuff - cue a brilliant business idea!Read More
Archie's enduring love of pasta shows no sign of ending and, to keep myself from dying of boredom due to repeatedly cooking the same thing, I am trying to keep it at least half way interesting.
Our conversations around meal times go a little like this:
Me: 'Arch, what would you like for lunch/dinner?'
Arch: 'Pasta mummy' [delivered incredulously with a top note of 'Seriously?! Must I keep repeating myself?']
Me: SIGH [goes and has a loooong sit down]Read More
This is the final recipe in our Sainsbury's series. I know chicken wraps have been done to death but there is a reason for that; they're delicious, you can customise them to please most people and they're easy! These are a regular mid-week meal in our house and If I am organised I get my chicken thighs marinading the night before but equally, you can do it a couple hours before and it's no biggie. The veggie gets his with some roasted veg and some halloumi if I'm being really organised.Read More
Here's our second video for Sainsbury's and it is honestly one of our absolute favourites. I'll often cook this on a Friday when I am craving something easy and comforting. It's a mix of the Spanish dish Espinacas con Garbanzos and the Italian dish pasta e Ceci and it works so well with pasta. Archie is a big fan of chickpeas (which surprised me as I hated them as a kid) and wolfs this down, it's also a great way to get some protein into my husband who's veggie.Read More
Lizzie King aka 'Lizzie Loves Healthy' is a real healthy eating tour de force, as you'd expect from the name of her blog/socials etc but there's more to her than that. A nutritional health coach who also trained at Prue Leith's cookery school, Lizzie has both brains and the braun and she's not afraid to use 'em. Rather than peddling some faddish diet, Lizzie is passionate about trying to help us all eat a little better but her approach feels a lot more honest and accessible. Also, and to me most importantly, she knows how to cook which makes all the difference.Read More
